Actions
Lactic acid bacteria are unique microorganisms which have several important properties for better human health. When ingested these microorganisms cross the gastric acidity and bile in duodenum undamaged. Within the intestine lactic acid bacteria germinate in upper digestive tract, become metabolically very active, degrades carbohydrate with production of lactic acid, creates an environment of acid pH which inhibits development of pathogens and helps to restore normal balance of intestinal flora after antibiotic treatment with potential for prevention of antibiotic associated gastrointestinal side effects. Further, lactic acid bacteria produces natural antibiotics within the system and are believed to be important in inhibiting potential pathogens. The ability of lactic acid bacteria to produce lactase enzyme during the fermentation process has led to its use in cultured dairy foods and nutritionally lactobacilli is associated with alteration of lactose intolerance, synthesis of B-vitamins and elaboration of enzymes resulting in partial hydrolysis of milk protein, fat and lactose.
